Salsa, Fajitas and more… oh my!
When it is sizzling hot outside I start thinking of sizzling fajitas, salsa and my favorite Tangerine Dream cocktail. So today I thought I’d share some of my favorite recipes that are perfect for summer sizzle.
Fajita Marinade
Juice from 2 limes
8 T Olive Oil
2 T Worcestershire sauce
1 T Agave syrup
3 finely diced jalapenos
¼ c finely chopped red onion
1-2 drops Cumin oil
3 drops Cilantro Oil
3 drops Lime Oil
Salt & Pepper to taste
Mix all ingredients, add meat of choice and refrigerate 15 minutes to 1 hour. Personally, my favorite combination is a chicken, bacon and a little shrimp. I like to add bell peppers and mushrooms and many people add fresh tomatoes. When you are ready toss in a piping hot pan and cook until the protein is done. Right before I pull them, I toss some Monterey jack cheese which melts by the time people dish up. I usually use corn tortillas but any tortilla works fine. If you try corn remember they have to be cooked.
Vegetarian options work really well for this.
I serve with rice and beans, sour cream and salsa.
The salsa I love is my friend Sharyl’s salsa. Probably the best I’ve ever had. This recipe makes a huge amount. I served it at a class and I was floored at how much was gone at the end of the night.
Sharyl’s Salsa
1 bunch cilantro
8 roma tomatoes
1 large mango (optional)
1 small red onion
1 large can La Costena Jalapenos and carrots
2 large cans diced tomatoes
1 red bell pepper
1 yellow bell pepper
1 large can tomato sauce
1 small can tomato paste
1 clove garlic
Juice of 1 large lime
Lime oil
Lemon oil
Cilantro oil
Black Pepper oil
Salt to taste
Dice all ingredients then add the diced tomatoes, tomato sauce, tomato paste, lime juice and salt.
Then add a toothpick swish of the black pepper oil and cilantro oil. Add 1 drop each of lemon and lime oil.
Combine all ingredients and increase black pepper and cilantro oil as needed. Remember they tend to build over time so go slow.
If tomatoes are acidic add a pinch of sugar or agave syrup.
Serve with tortilla chips.
This meal wouldn’t be complete without a yummy cocktail to go with it. My favorite is my Tangerine Dream.
Tangerine Dream Cocktail
1 shot Whipped Cream Vodka
Ginger Ale
1 drop Tangerine oil
Ice.
Put ice in an Old Fashioned glass. Put a drop of Tangerine oil on the ice. Pour in the shot of vodka. Fill with ginger ale and give a quick stir.
Tangerine Dream Mocktail
Cream Soda
1 Tangerine oil
Ice.
Put ice in a glass. Put a drop of Tangerine oil on the ice. Fill with cream soda and give a quick stir and enjoy.

Looks like a great recipe although being vegan I would omit the animal products and substitute with vegan meat and cheese substitutes or just go for all veggies! Load with color and vitamins, that’s for sure!

Even though I am not a big fan of Mexican food, you do make a great case for it here. Everything sounds yummy and certainly sounds like a feast of different tastes and colours. I am sure people are clamouring to have dinner at your house. 🙂

Love fajitas but not usually in restaurants because they come with a lot of stuff I don’t like/eat and they get all smokey… but love your alcohol sides! 😉
