Long gone are the days of mom standing there telling us to eat our vegetables while we begrudgingly choked them down. Now we tend to go the green smoothie route a lot but I love a great salad. There are so many lovely greens coming in from the garden or in the organic section at the market we should take advantage of them and use a few oils to add extra flavor!
Here are some of my current favs…
Asian Pear Salad with Citrus Dressing
Salad:
Spring Mix, Baby Greens and/or Spinach
Candied Pecans
Red/Yellow Bell Peppers
Blue cheese crumbled
Asian Pear sliced
Raspberries
Croutons
Optional: Avocado, Orange Slices, Onion, Walnuts, Granny Smith Apples, Craisins depending on what is in season.
Citrus Dressing:
1 ½ c Vegetable Salad Oil of your choice
1 c. Apple Cider Vinegar
1/3 c raw organic honey
1 T dehydrated onion
¾ t Tarragon, dried
1 t Thyme, dried
1 t garlic, chopped fine
1 t kosher salt
1 drop Lemon Essential Oil
1 toothpick black pepper essential oil
dash onion powder
Essential Beet Salad
Salad:
4 medium sized beets, cooked and cut in quarter sized bites
2 pears, cut into quarter sized bites
1 cup Lentils, cooked
Micro greens
⅛ cup feta cheese, torn into small pieces
Dressing:
⅛ cup olive oil
1 tablespoon white balsamic vinegar
1 tablespoon honey, raw organic
2 drops Lime essential oil
2 drops Wild Orange essential oil
Salt and pepper to taste
Directions: In a small bowl whisk together dressing and serve over salad.
Wild Orange Kale Salad Dressing
4 Tbsp Honey
4 Tbsp Vinegar
Dash Salt
Dash Pepper
Dash Granulated Garlic
1 tsp Sugar or raw organic Honey
2 drops doTERRA Wild Orange
Kale
Snap Peas
Cucumbers
Sliced Almonds
Green Onions
Chop up vegetables.
Mix dressing into salad mix
Top with feta cheese and mandarin oranges!

Strawberry Kale Salad
Chopped kale
sliced strawberries
chopped walnuts
feta or goat cheese
chopped red onion,
mix in large bowl.
Dressing:
1/4 cup Apple Cider Vinegar
1 Tbsp Dijon Mustard
1-2 Tbsp Maple Syrup
Dash Salt and Pepper
2 Tbsp Olive Oil
2-3 drops doTERRA Wild Orange

Lemon Waldorf Salad
Ingredients:
5 apples medium diced
5 ounces celery small diced
4 ounces walnuts course chopped
⅔ cup mayo or plain Greek yogurt
7 drops Lemon essential oil
Directions:
Combine all above ingredients, serve.
